Individual Italian Meat Loaves
Serves 4
1/2 cup Bertolli pasta sauce, divided*
1 pound 85% lean ground chuck
3/4 cup finely chopped onions
1/4 cup Italian dry bread crumbs
1 large egg
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
Preheat oven to 400 degrees F. Spray 4 small loaf pans with nonstick cooking spray; set aside. Combine 1/4 cup pasta sauce with ground chuck, onions, bread crumbs, egg, Italian seasoning, salt and pepper. Mix together well. Divide beef mixture in four portions. Shape each portion into a 5x3-inch loaf. Place loaves in prepared pans. Bake for 15 minutes.
Evenly spread some of the remaining pasta sauce on each loaf. Bake 5 to 10 minutes more or until the internal temperature of each loaf reaches 160 degrees F.
*I use the basic Marinera sauce.
